This past year I have found myself preparing more restaurant-style meals at home for lunch. With both Jeff and I working from home, we are always looking for a delicious and healthy lunch option, and it is just easy to make the same thing for both of us. Recently, I made the best Steak Salad with the help of Verde Farms Beef Steak Strips.

Truthfully, chopping salad ingredients took longer than actually preparing the steak. Quick, easy, and delicious are what I’m always looking for with meal prep.
Sous-Vide Style
Meal prep goes so quickly because the beef has already been cooked “low and slow” in their own juices for more than 2 hours. This cooking method is called sous-vide. With a consistent cooking temperature the entire time, the strips are infused with authentic savory spices and not overcooked. All you have to do is add that quick sear.

The directions can’t be any easier to prepare. Just 90 seconds on each side, and then pour in all the juices for added flavor for a minute more. Perfect for quick meals.
Salad Fundamentals
They say you eat with your eyes first and this salad is no exception. We recently joined an organic product subscription service, so we have quite a bit of produce coming to our home weekly. I knew when all these pretty colors showed up on my doorstep, I knew we needed a big delicious salad.
When I’m thinking about salad, the first thing you need is a sturdy base. I love a crisp Romaine lettuce for this salad to hold up to all of the toppings and of course those sizzling steak strips. A less sturdy leafy green like arugula or spinach could wilt quicker and not feel as filling. Also, since we eat with our eyes, load up with different shapes and colors of vegetables. I love keeping the yellow pepper whole for pretty rings, flecks of purple with the onion, and of course those bright grape tomatoes.
The Best Steak Salad with Greek Yogurt Blue Cheese Dressing
Eat the rainbow with this delicious steak salad featuring Verde Farms Sear It Steak Strips!
Ingredients
- Verde Farms Simply Sear It Steak Strips
- 3 Heads of Romaine Lettuce Quartered and Chopped
- 1/2 Pint Grape Tomatoes Halved
- 1 Yellow Bell Pepper Sliced
- 1 Cucumber Sliced and Quartered
- 1 Avocado Sliced
- 1/2 Cup Thinly Sliced Red Onion
Blue Cheese Dressing (Optional)
- 1/4 Cup Buttermilk
- 1 Single Serve Container Plain Greek Yogurt
- 2 Tablespoons Chives
- 1/2 Cup Blue Cheese
- 1 TSP Garlic Powder
- Salt & Pepper
Instructions
Salad
In a large platter or bowl, add a base layer of lettuce and then evenly add grape tomatoes, sliced bell pepper, red onion together and set aside.
In a Nonstick Skillet over medium-high heat, sear the Verde Farms Simply Sear It Beef Steak Strips. Follow the direction on the back of the packaging for perfect steak strips.
Once seared, carefully assemble the salad with steak strips over the top of the salad. While steak strips cool slightly, slice avocado and arrange on top of the salad.
Serve with the Blue Cheese Dressing from below or your favorite salad dressing.
Blue Cheese Dressing
In a small bowl, combine buttermilk, greek yogurt, 2 TBSP of chives, garlic powder, and crumbled blue cheese. Add salt and pepper to taste. Stir to combine and set in fridge until time for service.
Gosh isn’t that just a pretty salad? Paired with my healthier version of a blue cheese dressing, it’s the perfect lunch. You’d never know it’s Greek yogurt-based with all of the flavor. Just need sparkling water, a patio, and some good company for lunch! I love the colors. If you’re sticking to a paleo diet, you could easily substitute the dressing for a more compliant dressing for your needs.
