I’m a fan of quick, easy and no fuss dinners. About 50% of the time, I’m really good at meal planning and setting our family up for success for dinners during the week. The other thing I started doing years ago was making my own homemade taco seasoning. It’s so much better and those little packets from the store aren’t always just spices. I like to quadruple my recipe and put it in a mason jar for future use. I can usually get about 5 or 6 meals with it. This dinner could not be easier. Just pop your entire sheet pan in the oven for 30 minutes and you have the yummiest dinner ever!
We usually serve our fajitas with a little cheese, sour cream and guacamole. I’m still always blown away with how sweet and soft the peppers and onions are with the contrast to the spices. Always so yummy. You can get $1 off your next PERDUE® purchase too!

- 1 Package PERDUE® FRESH CUTS™ Diced Chicken
- 3 Whole Peppers - Any color
- 1 Yellow Onion
- 2 Teaspoons Salt
- 2 Tablespoons olive oil
- 2 Tablespoons Taco Seasoning
- 8 Fajita Sized Tortillas
- 4 Tablespoons Chili Powder
- 1 Teaspoon Garlic Powder
- 1 Teaspoon Onion Powder
- 1 Teaspoon Oregano
- 1/2 Teaspoon Crushed Red Pepper Flake
- 2 Teaspoons Paprika
- 6 Teaspoons Cumin
- 2 Teaspoons Black Pepper

- In a small bowl, combine all seasonings together and store in an airtight container. I use a mason jar.
- Preheat oven to 400. Slice onions and peppers and place on large sheet tray lined with parchment paper.
- Add PERDUE® FRESH CUTS™ Diced Chicken to pan. Coat with Olive Oil, Salt and Taco Seasoning and spread out to be one layer on pan. Bake for 25-30 minutes until veggies are soft and cooked through.
- Serve with tortillas and any other topping you may enjoy.
