It is no secret that at our house we love to snack. 3 PM rolls around and I need a snack while I sit and watch my ridiculous political news which feels like a never ending soap opera. We try to not have a lot of processed foods in our home for fear that we’ll just tear right into them at any given point. Aside from fruit snacks and tortilla chips, we try to keep it to a minimum.
Last year after I had surgery one of my friends brought us over some yummy treats similar to these peanut butter chocolate chip balls. It was great for us at the time because we had no kitchen while we were in remodel construction, but still needed healthy snacks. Over time, I’ve modified this a little more to what my little family prefers and it’s been a winner. I like to whip up a batch and keep them in the fridge for afternoon snacks or even a couple for breakfast if I’m on the go with a cup of coffee.
We were fortunate enough to partner with Naturebox on another project, but I was able to try some of their other products and incorporated them into this particular recipe. I used their All Natural Peanut Butter and Chia Seeds. We keep both of these on hand for quick and easy other breakfast options, and it was perfect to try with this recipe. Once you get the base for this recipe down, you can really swap out the chocolate chips for anything. Dried fruit, nuts, or even M&Ms. Lots of options. I like the mini chocolate chips because you get a little bit of chocolate in every bite.

- 1 Cup Old Fashioned Oats
- 1/2 Cup Natural Peanut Butter
- 1/3 Cup Local Honey
- 1/2 Cup Mini Chocolate Chips
- 1 TSP Vanilla
- 2 TSP Chia Seeds
- 1 Pinch Salt
Ingredients

- In a large bowl, combine all ingredients together.
- With a cookie scoop, , make 12 even balls and place in refrigerator to firm up. Serve warm or cold.
Yum! I’ll have to try your version. I rarely have mini chips on hand so I am adding them to my grocery list now.
