One of my favorite summer time treats is fruit pizza. It’s a crowd pleaser, delicious and of course so patriotic. We’ve hosted big 4th of July parties in the past, but this year we’re going super low key and spending time with family. However, I still needed my fruit pizza fix! I decided rather than having one big pizza that mini pizzas would satisfy the craving. I wouldn’t need to make a ton and they are a great small sweet treat. I had Hattie help me in the kitchen, since this is the easiest dessert you can whip up and super kid friendly.
All you need is refrigerated sugar cookie dough and just follow the directions. You could make life even easier and get bakery sugar cookies. Do what works for you! Then combine the whipped topping and whipped cream cheese together and let chill in the fridge. I highly recommend getting the whipped cream cheese because it will blend so much quicker than a brick of cream cheese. Trust me, it’s no fun to stand there waiting for cream cheese to blend.
Hattie decided we needed Halloween sprinkles on some of our cookies, so if you’re seeing us in the next couple of days, don’t question the ghost sprinkles! Even though some have funky seasonally inappropriate sprinkles, I know she’ll eat these because she made them herself. She has such a sense of pride in the kitchen and I love seeing her flex her culinary muscles.
This recipe is perfect for any seasonal berry. You could even make it into a cookie sandwich with fruit inside! Once you have cookie base and the whipped filling, all you need is your imagination. I also love adding blackberries, pineapple, cherries. So many options! We’ve even done bananas.

- 1 Package Refridgerated Sugar Cookie Dough I bought the Pillsbury 24 Pack
- 1 Cup Whipped Cream Cheese
- 1 Cup Whipped Topping
- 10 Sliced Strawberries
- 1 Cup Blueberries
- Sprinkles (optional)

- Prepare cookies as directed on the package. If you're in a pinch, buy store bought cookies. Let cool.
- In a small bowl, combine whipped cream cheese and whipped topping. Put in refrigerator to chill until cookies have cooled.
- Then it's assembly time! Spread a generous layer of the whipped mixture and garnish with your seasonal berries. If you're feeling extra, add sprinkles! If you aren't serving right away, pop back into the refrigerator until ready to serve.
