Grilled Mexican Street Corn Indoors
Diced Red Onion
Parmesan cheese or Cotija or Feta
Preheat Indoor Grill to sear. Lightly spray corn with cooking spray and grill. Approximately 3-4 minutes a side.
Once charred, remove and cut the kernels off the cob add to bowl.
Combine corn, onion, juice of 1 lime, chili powder, mayo cilantro and cheese together. Stir to combine. Add salt & pepper to taste.
Let chill in fridge for 30 minutes and serve. Enjoy!
