This past week as been insane – nothing but rain. We’re talking 3-6 inches of rain and flooding everywhere. Definitely an issue when you’re planning a BBQ and you are limited on what to make indoors. Luckily, I have my Hamilton Beach Searing Grill on hand to help give me that grilled flavor indoors. We love to grill almost everything and when I was at the grocery store they had corn on super sale. We’re talking 8/$1. Jeff really hates eating corn off the cob, apparently he had a bad experience in college, but I found a workaround for one of my side dishes, Mexican Street Corn. Instead of adding all the yummy flavors to the corn on the cob, I cut the kernels off and made a delicious side dish that was a hit for everyone!
I really loved using the Indoor Grill for a few reasons 1) Super light weight and I didn’t have to light a grill. Everything is electric and sits right on the counter. 2) Super easy to clean. The grate comes out and it was very easy to wash. Corn isn’t all that messy, but I used a little cooking spray to insure it didn’t stick. Bonus – Dishwasher safe too!
How pretty is that corn? Nothing is prettier than charred corn. I always do the bi-colored corn too, it’s just so yummy looking. This dish is just so light and fresh and perfect for your summer BBQ. It took no time at all to whip up and even yummier the next day. I got a little crazy and added to it my salad the next day.

- 6 Ears Corn
- 1/2 Cup Mayo
- 1 Lime
- 1/2 Cup Chopped Cilantro
- 1/2 Cup Diced Red Onion
- 1 TBSP Chili Powder
- 1/4 Cup Parmesan cheese or Cotija or Feta

- Preheat Indoor Grill to sear. Lightly spray corn with cooking spray and grill. Approximately 3-4 minutes a side.
- Once charred, remove and cut the kernels off the cob add to bowl.
- Combine corn, onion, juice of 1 lime, chili powder, mayo cilantro and cheese together. Stir to combine. Add salt & pepper to taste.
- Let chill in fridge for 30 minutes and serve. Enjoy!
This looks so yummy!! If I won the first thing I would make would be some grilled tofu for a balsamic caprese sandwich. I’ve tried to cut down on my meat consumption and add healthy alternatives for Meatless Mondays once a week.
