Last week we had the chance to get our hands on some strawberries from Eckert’s! They invited us out for a family fun day and boy did we have fun! We always love heading out to the fields because it’s a great way to connect with where our food comes from and of course support local business. I’m always so excited to get home to come up with a way to use all the berries we’ve picked and this year I think I found a winner.
This year I’ll confess, I totally forgot that we had these in the fridge until the end of the week, but they were still perfect in the FreshWorks produce containers. We had an impromptu play date and I knew I can always rely on my cousin for honest feedback on recipes. Last year I was introduced to honey goat cheese and I’ve been hooked ever since. There is something about the sweetness of the honey and the tang of the goat cheese that are a fantastic combo.
Now for me, the foundation for any great snack is bread. Especially toasted bread. My last meal on this earth will be an entire french baguette and salted butter. Mark my words. I don’t really care what’s on it, but olive oil, salt and a baguette is all I need. From there, I spread a hefty smear of honey goat cheese, added a few sliced strawberries, a little bit of torn mint and a drizzle of honey and it was the best snack in town.
Now, if you’re feeding a crowd, I’d double this recipe. Between the two of us, we totally ate an entire baguette, it was that good! So plan accordingly! This would be delicious as an appetizer for a BBQ, a baby shower, girls night out or an easy to assemble dish for your next game night. I think this will have to be my new go to party appetizer for the summer. It’s just the perfect combo!

- 1 Whole Baguette
- 1/4 Cup EVOO
- 1 Package Honey Goat Cheese Plain Goat Cheese would be fine too
- 4-5 Sprigs Mint
- 5-10 Whole Strawberries Sliced
- 1 Drizzle Honey

- Preheat oven to 350. Slide baguette in 1/2 inch slices. Drizzle with EVOO and salt and bake for 8-10 minutes
- Slice strawberries set aside
- Once crostini are done, add a good smear (1/2 TBSP or so) to each crostini. Add sliced strawberries, add a little torn mint and a drizzle of honey over the top and enjoy!
