Raise your hand if meal planning is one of those things you loathe doing weekly? I always find myself eating the same few things week after week. Now I know why it’s called Taco Tuesday – everyone was lacking in meal planning! I’m all about doing one big shopping trip each week and getting options that I can pull double duty and give me simple solutions for not only our dinners but our lunches too. As a stay at home mom, we are mindful of our budget and as much as I’d like to eat out for lunch everyday, it’s just not in the cards. My husband has a jam packed schedule almost everyday, so for him, packing a lunch is the most practical use of time at work.
With the help of Schnucks, I can turn their family meal deal into lunch for a couple of days and get some extra family time in at night with the time savings from not cooking! I love picking up their Family Meal deal with a Whole Roasted Chicken and some of their sides along with a 1.25 Liter of Coca-Cola™. Now my side of choice at Schnucks is always their mustard potato salad. It really does blow every other potato salad out of the water in my expert potato salad opinion. This particular week, we picked up the Herb Chicken knowing I had big plans for the next day.
The great thing about a Whole Roasted Chicken is it will pull double duty. After dinner, I’ll use the leftover chicken to make my favorite Greek Chicken Pasta Salad. I have the noodles going while I’m cleaning up the kitchen from dinner and prepping for the next day. Other than chopping the veggies, it’s a pretty easy assembled salad.
I’m the Coca-Cola drinker in our house, so I have plenty leftover for lunch the next day to enjoy with the pasta salad. This dish is kid friendly, loaded with veggies and Hattie put her seal of approval on it. Jeff likes to take it to work and eat it on the go at his desk or in a meeting. He’s a busy guy and sometimes we have to call him and remind him to eat his lunch. He gets that busy!
Taking the help from the store and making lunches in advance gives us the opportunity to have more family time at night and even have a fun day time activity since we already know what’s for lunch. This packs really well for a picnic too! Sometimes we’ll even pick up Jeff and have a family picnic for his lunch hour. That’s what I like to call the perfect lunch time break!

- 1 Cup Shredded Chicken
- 1 Cup Chopped Cucumber
- 1/2 Cup Halved Cherry Tomatoes
- 1/4 Cup Kalamata Olives Black Olives would be fine too
- 1/2 Cup Feta
- 2 TBSP Chopped Parsley
- 1 Cup Favorite Greek Dressing I use a Greek Vinaigrette
- 8 oz Bow Tie Pasta
Ingredients

- Prepare Bow Tie Pasta as directed on package. Rinse with cold water to cool down.
- In a large bowl, combine chicken, cucumbers, tomatoes, olives, pasta. Add 3/4 cup of dressing to bowl and stir. Add more if it needs a little more moisture.
- Add Feta and chopped parsley over top and serve. This is even better next day after flavors have combined.
