There are some desserts that just bring back memories for me. One of those are dirt cups and sand cups. I always got excited as a kid, and really there isn’t much to them, but they just seem so darn cool. We hosted Easter this past weekend and this always just cries out spring and summer fun. I thought how cute would Peeps be laying in the sand. And Beach Bunny Sand Cups were born! I will confess I attempted to pipe little bikinis on the bunnies, but I was painfully unsuccessful. I took that into Pinterest Too Far Land and stop while you’re ahead land. But hey, a girl has to try right? Bikini or not, these desserts turned our adorable and flew off the counter at our Easter Brunch!
This was a a fairly kid friendly activity too. I had Hattie in the kitchen with me, and she was in charge of the sand. We worked on our measuring skills and talked about how to make even layers. Our layers didn’t quite line up on every one, but still delicious. You can get all crazy and make your own pudding, but secretly, I love Jello Pudding. I always keep a box of chocolate and vanilla on hand because you never know when your sweet tooth will attack!
While I love the all vanilla combo, this could be also amazing with banana pudding and bananas. My husband has already made a special request for next time we make these. The possibilities are endless. You could also substitute graham crackers too. Really, once you get the ratios down, the sky is the limit. Just remember 2 tablespoons of cookie, 1/4 cup of pudding.

- 1 Large Box Instant Vanilla Pudding Serves 6
- 1 Box Vanilla Wafers
- 6 Clear 12 oz Solo Cups
- 3 Cups Milk Per Pudding Directions
- 6 Cocktail Umbrellas
- 6 Bunny Peeps
Ingredients

- Prepare Vanilla Pudding as directed on box. Put in refrigerator and let sit for 30 minutes.
- In a large zip top bag or food processor, crush entire box of Vanilla Wafers until it resembles sand. I leave a few larger pieces in there too, just for texture.
- Set out 6 clear cups. Add 2 TBSP Cookie, 1/4 Pudding, 2 TBSP Cookie, 1/4 Pudding, 2 TBSP Cookie until you have 5 even layers. Put in fridge until ready to serve.
- Once ready, add Peep and Umbrella and you're ready to enjoy!
