I love traditions. Traditions are what make holidays memorable and things you look forward to. For years my family has always had a pretty set Easter menu. Ham. Cranberry Fluffy Stuff and of course deviled eggs. Deviled eggs are always so funny because people always have an opinion about them. Mayo or Miracle Whip. Mustard or Pickle Relish. It’s seriously crazy some of the stories I’ve heard about eggs.
A few years ago, after we spent so much time dying eggs and noticed that a couple had cracked and had left a little coloring on the egg white and thought it may be pretty to dye the eggs unpeeled. And ever since, it’s been the way I’ve made them. I think they are a prettier this way too!
Everyone has a way of making their hard boiled eggs, but I like to use a week old egg covered in cold water, a tablespoon of kosher salt and a splash of white vinegar. Bring to a boil and once it is at a rapid boil, remove from heat and sit for 12 minutes then a quick ice bath and you should be able to peel quickly. I also recently found Costco has pre-shelled eggs that are genius. I’ve made those in a pinch if I didn’t have time.
Dying eggs couldn’t be easier. If you have food coloring on hand, use that. I like the McCormick Naturals, but any should be great. You’ll need some plastic cups, white vinegar, food coloring and water.
Each cup, you’ll need a ratio of 2 tablespoons of vinegar to 1/4 cup of water and approx 10 drops of color. You can get a little creative with the coloring.
Slice the eggs in half and remove the yolk and add whites to cups. Let them sit approximately 5-10 minutes. Just keep an eye on them to get the color consistency you’d like. Use less drops for lighter color, or more for more vibrant colors. The sky is the limit.
To make the filling, like to use my mini food processor and pulse egg yolks, 1 cup of mayonnaise and a 2 Tablespoons of yellow mustard and salt and pepper. You can use a plastic bag and pipe in the filling, or just spoon individually. I also like to add paprika on the top for garnish.
