Does anyone really know what day it is anymore? I’m finding that the days just blur together and then always ends up being a Sunday. With our new normal here lately, we’ve been spending a lot of quality family together and family dinners are now a daily requirement. Since we’re eating at home more daily, we’re looking for creative ways to spice up our favorites. Today, I’ve got a good one for you – Chicken Bacon Ranch Pizza. We’ve been experimenting with all kinds of pizzas lately and I have to say this one is a winner. I think the secret ingredient is the bacon! Since we’re teaming up with the National Pork Board, I felt it only right to share this delicious treat with you in hopes that your Blursdays are more bearable with a delicious meal.

Now, let’s get to down to talking about, this pizza and bacon!
Now since we’re talking about ingredients, let’s talk about the star of this dish, the bacon! How do you cook your bacon? A few years ago I converted to Team Bacon in the oven and it was quite the game changer for me. It saves me time, the clean up is so easy and keeps my bacon looking perfect every single time. Just preheat your oven to 425, add your bacon to a lipped baking sheet with foil or parchment and bake for 20-25 minutes. Don’t forget to let them rest on a paper towel-lined plate to eliminate the excess grease. Perfect bacon every time.
Since I have Hattie in the kitchen with me, let’s get down to business with this pizza. I know that if she helps me make a recipe, she will definitely eat it!
I put her to work right away rolling out the dough. The great thing about homemade pizza is that it is fairly forgiving. Is the crust too thin in a corner? It’s quite alright! We’re all about giving the pizza that “rustic” look, right?
Let’s get ready for toppings. This particular pizza is missing the sauce. I’m not the biggest sauce fan, so I love coming up with recipes that I don’t have to make it the star of the show. This pizza was ready for goat cheese and mozzarella. I also prefer a store-bought bagged mozzarella over a ball. I think the moisture level is too much for fresh mozzarella with this combo but perfect for other pizzas.
This recipe also called for bacon. How can you day not be better with bacon? We opted for fully cooked bacon from the store and it made our prep time a breeze. If you had leftovers on hand, use those! We also used leftover grilled chicken as a topper. It’s a great way to use up what you have in your refrigerator! You may want to make a few extra slices of bacon, but if your home is like ours, we have a topping sneaker on our hands!
After a quick 20 minute bake, this pizza is ready to come out of the oven. I love adding a pop of green and freshness, and my garden had chives, parsley, and scallions growing. I grabbed a handful, gave it a rough chop, drizzled a little store-bought ranch dressing, and dinner was complete!

Pizza Dough Recipe (Optional)
In a bowl or stand mixer, combine 1 Cup of Flour and all other ingredients. Once combined add 1 more cup of flour. You may need another 1/3 if the dough is sticky, mix until a ball is formed.
In a clean bowl, add TSP of Olive Oil and add dough, cover with plastic wrap, let rise for 1 hour.
When time to roll out the dough, dust a little flour on the workspace to prevent sticking. Roll to 12 inches.
Hattie proclaimed it was the best pizza crust she ever had and asked for us to not eat it all so she could have it for lunch the next day. That is a sure sign of success! I’d have to say Blursday Blahs no more! What is your favorite way to eat bacon?
