Summer times means it is tomato time. I honestly don’t love fresh tomatoes but I love Bruschetta. It’s so good. At our 4th of July party (a week late) I had a ton of tomatoes from our CSA and I wanted to use them up. Here is a quick and easy bruschetta appetizer that is perfect for sharing.
2 Cloves Garlic
3-4 Tomatoes – I used Roma and a couple from my CSA, but any would be good!
Preheat the oven to 350. Slice your baguette into slices and arrange on a cookie sheet. Usually 15-20 slices depending how big your baguette is. Drizzle with EVOO, Salt & Pepper and toss in the oven for about 10 minutes.
While that is going, dice up your tomatoes (I deseed mine), mince your garlic and chiffonade your basil. It’s fancy. Just roll up your basil and cut it in long strips. Super easy.
Toss everything together add salt & pepper to taste.
When the baguette is done, top with the tomatoes and Voila! Almost too easy to be a recipe, right? Oh but so good. It would even be good with a little shaved parmesan cheese or balsamic reduction on top. Yum!
